According to Jewish tradition, an infant is presented to God in the temple 40 days after his birth. February 2nd is 40 days after the celebration of the birth of Jesus Christ.

The festival of Epiphany, Three Kings Day (January 6th) in the Christmas season is when people share a Rosca de Reyes cake. Hidden in the cake are a number of plastic baby Jesus. Whoever finds the Niño Dios (baby doll Jesus) has the responsibility to prepare the next holiday fiesta, Dia de la Candelaria (blessing of seeds and candles).

On Dia de la Candelaria the responsible person provides the guests with tamales and atole. Atole typically includes masa (corn hominy flour), water, piloncillo (unrefined cane sugar), cinnamon, vanilla and optional chocolate or fruit. The mixture is blended and heated before serving. The drink is made by toasting masa on a comal (griddle), then adding water that was boiled with cinnamon sticks. The resulting blends vary in texture, ranging from a porridge to a very thin liquid consistency. Atole can also be prepared with rice flour or oatmeal in place of masa.

This Holiday is a blend of religions and foods. It is a wonderful, delicious day.
