As we find ourselves in June, I am reminded that Summer Vacations are right around the corner.

I am sure you all know my now, that I am big on the preparation of Comfort Foods either comfort meals of my Mexico but also Comfort Meals that I have tried elsewhere.
An all-time favorite of mine is the Hamburger Potato Casserole.
