Tropical Musings from Paradise November, 2020 Edition

One thing that I have learned from this Pandemic is that we are All in This Together.  No matter your station in life, your finances, your medical health, or the size of your family this virus has had a profound impact on the way that each of us leads our daily lives and thinks about the future.

I do know that by standing together, we can achieve more and hold on stronger than if we stand alone.

I have a great sense of pride to be living in Lo de Marcos, born and raised in Colima and most importantly Mexican.  Mexicans are a resilient people and as a country, we need to unite and repair ourselves.  My friends in other countries, I ask for you to do the same.  Perhaps working together on a local level, a national level, and on an international level, we can bloom again.

Just two weeks ago, I had the opportunity to go away from the office for a few days.  My criteria were safety and social distancing.  I found a wonderful oasis of a community named Punta el Custodio.

A small private enclave of 14 stately properties which are located 75 miles north of the Puerto Vallarta International Airport.

Cooking with Armando

Over the past few months, I have taken more of an active interest in cooking and experimenting with new recipes.  Here is one that I have enjoyed twice and really enjoy.

If you like juicy BBQ Ribs with the meat literally falling off the bone and you own a slow cooker, you might want to try this out.

Slow Cooker Barbecue Ribs are easy and absolutely DELICIOUS! Fall-off-the-bone tender ribs finished off in the oven to create the best, barbecue sticky glaze and caramelized edges! The 4-ingredient marinade is hands down the best marinade smothered on ribs.

I add an additional teaspoon of the Cayenne pepper and skip the last step in the oven and I have not been disappointed, nor have my guests.

El Vinatero Bar and Artist Collective

Given the mandate to reduce occupancy of the bar to 30% we had no choice but to remove tables and chairs away to storage.

We replaced those missing tables with an Artist Cooperative.  Come on in and see pottery from Tonala, tie-die creations, wonderful paintings, Talavera, Lo de Marcos Souvenir items, and more.

You can still find the best in Mexican Wines and Beers along with a Full Bar currently open from Noon to 8.00 PM.  These hours may change based on customer requests.
